There is some fruit generosity on the front palate which really explodes in your mouth. Finishing with lime zest and a touch of herbaceousness that lends itself to be paired with freshly caught WA seafood. A great example of a Great Southern coastal Sauvignon Blanc. Machine harvested Sauvignon Blanc fruit was pressed and underwent solids flotation before being racked to stainless steel tank with low solids for fermentation. A cool ferment was carried out to maximise varietal character and freshness. Racked off lees as soon as ferment was completed.
